Unique Pumpkin Recipes to Try this Season
Pumpkin is arguably the flavor of Fall and not only for dessert! Pumpkin isn’t only for desert lovers, there’s tons of dishes you can make with your favorite delicious ingredient.
Here’s a few you might not have tried yet:
- 2 tbsp. unsalted butter
- 1 large potato
- 1 large onion
- 4½ c. chicken broth
- 1 can pure pumpkin
- 1/2 tsp salt
- 1/2 tsp pepper
- ¼ tsp. ground nutmeg
- ½ pt. heavy cream
Melt butter in a large pot over medium heat. Add in the potato and onion, then stir occasionally for around 8 minutes, until the onion is translucent. Add in chicken broth and let it boil. Cover, reduce heat to low, and cook until potato is tender, around 10 to 12 minutes. Then stir in the pumpkin. Use an immersion blender to puree the entire mixture until it’s smooth (or puree in batches), then return to pot. Stir in salt, pepper and nutmeg and then increase the heat to medium-high and bring it to a boil. Then cover, reduce the heat to low, and cook for 10 minutes. Stir in heavy cream and heat thoroughly. Season with salt and pepper, if desired, and serve.
- 1-3/4 cups canned pure pumpkin
- 1 teaspoon chili powder
- 1 teaspoon minced fresh sage
- 1/4 teaspoon cayenne
- Nonstick cooking spray
- 8 small flour tortillas
- 5 ounces brie cheese, thinly sliced
Stir pumpkin, chili powder, sage, cayenne together in a small bowl. Heat griddle over medium heat and spray with cooking spray. Put four tortillas on griddle and top each with 1/4 of the pumpkin mixture, 1/4 of the cheese and another tortilla. Cook 4 to 6 minutes or until tortillas are golden and cheese melts. Turn the tortillas over halfway through. Cut each into fourths and serve.
